1 onion(chopped)
knob of fresh root ginger(chopped)
2 garlic cloves(chopped)
1 tsp cumin seeds
2tbsp oil
1/2 tsp turmeric
1/2 tsp hot chili powder
227g can chopped tomatoes
350g potatoes
500g chicken breasts
1/2 tsp garam masala
2 tbsp coriander
basmati rice boiled with 2 Cinnamon sticks, to serve
1. put the onion, ginger and garlic in a food processor with one tbsp of water until smooth. Fry the cumin seeds in oil for a few seconds. Stir in the onion puree and brown over a medium heat, adding a splash of water if it stars to catch.
2. Sprinkle in the turmeric and Chile, add the tomatoes and fry for 5 mins. Stir in the potatoes and 250ml hot water, then cover and cook for 10mins.
3.Add the chicken and garam masala, and simmer for 15-20 mins or until the chicken is cooked through. Season with salt. Tip into a bowl. scatter ovre coriander and serve with the basmati rice.
